Easy Air-Fryer Corn Ribs With Hot Honey Butter

This finger-licking-good corn dish is guaranteed to give you all the feels of sinking your teeth into some juicy, home-cooked pork ribs. These meatless ribs come together in minutes instead of hours, are vegetarian-friendly and still pack a punch with its sweet, sour and spicy flavours.

The flavor inspiration for the corn ribs comes from “Bhutta,” an Indian corn on the cob dish that’s typically enjoyed by the beach. I still remember how vendors would set up their corn-laden carts in the late afternoon by Juhu beach, a hotspot for families in suburban Mumbai. You could pick the corn ear you wanted and the vendor would roast it on a glowing bed of coal before serving it with a salt, chilli and lime rub.

I know grilling usually isn’t an option for most city-dwellers but an oven or air-fryer does a pretty good job at roasting the corn. I prefer using the air fryer for this dish because it’s more efficient on time and energy than a conventional oven. Pre-heating the air fryer takes just 2-3 minutes and the ribs take about 8-10 minutes to cook. A large oven may take 20 minutes just to pre-heat!

No matter how you choose to cook the corn, there’s one essential piece of equipment that this dish requires: a very sharp knife. This will make it easier to cut through the corn and achieve that rib-like shape. Attempting to cut the corn using a blunt knife could result in injury so please exercise utmost caution during this step!

Ingredients
  

  • 2 ears of corn
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1 lemon

Hot Honey Butter

  • 1 tbsp honey
  • 1 tbsp butter
  • 1/4 tsp chili flakes

Instructions
 

Preparing the corn

  • Cut the corn as instructed in the video above
  • Juice the lemon and mix the chili powder and salt and brush over the mixture over the corn ribs
  • Preheat the air-frier on 200C for 2 minutes. Then place the pieces or corn with a little space between them to allow them to curl a bit. Cook at 200C for a total of about 10 minutes in total, while switching mid-way.

Preparing the hot honey butter

  • Heat a small non-stick pan on low heat until the butter melts. Add the honey and chili flakes and mix. You can choose to skip on the chili flakes if you prefer a milder taste.
  • Brush or drizzle the honey-butter mix on the cooked corn and serve immediately.
